Chicken Caesar Wraps

Weekday lunches are a constant struggle. Since I have issues with low blood sugar, I am supposed to eat regularly, with each meal and snack consisting of protein, fats, and carbs. And since my workday goes off the rails in one way or another about, oh, 92% of the time, I have to keep my office stocked with food or I won’t have time to eat until I get home… and Hangry Rachel just isn’t someone that anyone wants to be around. 

Fortunately, this chicken Caesar wrap is the perfect solution to my weekday lunch woes. It is easy to prepare at work (even if you don’t have a kitchen), filling, balanced, and delicious. Although I get tired of most meals after a few rotations, this one always seems to hit the spot. 

My favorite way to prepare these wraps is with Cajun-spiced chicken, but pretty much any chicken will do (rotisserie, poached, etc.), making this a great way to use up leftovers. You can switch up your greens—I like both sturdy lacinato kale and romaine lettuce. No matter what combination of ingredients you choose, this easy wrap is sure to become a perennial favorite.

Chicken Caesar Wraps

These deeply satisfying chicken Caesar wraps are the answer to all of your weekday lunch woes.

Ingredients
  

  • 1 pound about ½ kilo chicken breast, cubed
  • 1 tablespoon Cajun seasoning
  • ½ teaspoon kosher salt
  • 1 tablespoon olive oil
  • 3 cups (150g) romaine lettuce or lacinato kale, chopped
  • ¼ cup (20g) grated Parmigiano-Reggiano cheese
  • ½ cup (20g) croutons
  • 4-6 tablespoons (60-90g) Caesar dressing (homemade, or a good-quality refrigerated dressing, such as Marzetti’s)
  • 4 large (burrito-size) flour tortillas, plain or spinach, warmed

Step by Step Instructions
 

Step 1

  • Add the chicken breast to a large bowl with the Cajun seasoning, salt, and olive oil, and stir to combine.

Step 2

  • Heat the olive oil in a heavy skillet, such as cast iron, until hot. Add the chicken and allow to cook for 4-5 minutes, undisturbed, allowing the chicken to form a brown crust. Turn, and cook until browned on the other side and cooked throughout.

Step 3

  • Mix the lettuce, cheese, croutons, and Caesar dressing until well-combined.

Step 4

  • Add the warm chicken, and toss again. Divide the mixture between each tortilla.

Step 5

  • Wrap tightly, cut in half on the diagonal, and serve immediately.
    At the office, to make things easier, I spread the Caesar dressing over the tortilla, add in the remaining ingredients, and fold up the tortilla.

TIP:

  • To store your greens in the refrigerator, dry them well and chop them as soon as possible after purchasing. Place in a Ziplock bag with a few paper towels to absorb any moisture, and store up to one week.

Beverage Pairing

For this wrap, you will want to sip on a wine that won’t overpower the simplicity of the meal but will offer a great counter to the tangy and rich Caesar dressing. A fantastic option is Verdejo! This Spanish wine is acidic with grassy notes and, if aged, some nuttiness. The crunchy, bright wine is a clear match to a chicken Caesar wrap.
