I love a holiday-specific cocktail—especially when the mixologist is Hannah Moore. Her creative and delicious libations never disappoint. This Sukkot cocktail, featuring fall flavors like apple, allspice, and thyme, will not disappoint. Even if you do not celebrate Sukkot, you can still avail yourself of this spiced fall cocktail recipe if you’re looking for a seasonal indulgence.

Celebrating Fall and the Sukkot Festival

It seems like just yesterday that Hannah brought us Endless Summer, a peach-and-bourbon creation for that magical, liminal time between summer and fall. And already, a chill is in the air and the landscape is a palette of reds, oranges, and yellows. Today, she brings us Where’s My Lulav?, a spiced fall cocktail recipe that is perfect for Sukkot.

Fall has decidedly arrived—along with the holiday of Sukkot. Also known as z’man simchateinu, the time of our rejoicing, Sukkot joins together commemoration and celebration. Sukkot recalls the period of wandering in the desert following the exodus from Egypt, while also celebrating the harvest traditions established once the journey had ended.

To recall this journey, many Jews eat or even sleep in a temporary dwelling called a sukkah. During Sukkot, we shake the lulav (a bundle of palm, willow, and myrtle) and an etrog (a citron—a large lemon) inside the sukkah in a ritual of joy and thanksgiving. 

A Spiced Fall Cocktail for Sukkot

This Sukkot cocktail celebrates fall flavors with apple, warming bourbon (or rye), thyme, and allspice dram. It’s exactly what I want to drink as I sit on the porch, watching the brightly-colored leaves fall to the ground.

Hannah first named this cocktail, Thyme for Fall, but she likes its second name even better: Where’s My Lulav? (Let’s just say it’s not to be found in this cocktail!)

Ingredients
  

For the cocktail

  • 1 ounce (30mL) apple brandy or Calvados
  • 1 ounce (30mL) bourbon or rye
  • 1 ounce (30mL) apple cider
  • ½ ounce (15mL) thyme simple syrup (recipe follows)
  • ½ ounce (15mL) lemon juice
  • ½ ounce (15mL) allspice dram (such as St. Elizabeth’s)
  • Dash of bitters
  • fresh thyme (for garnish)

For the simple syrup

Step by Step Instructions
 

Step 1

  • Make the simple syrup by combining sugar and water (you can use the recipe above, or use other amounts in a 1:1 ratio).
    Allow to boil for 2-3 minutes, add the thyme, and set aside to cool (it will thicken as it cools). Strain into a glass container, and store.

Step 2

  • Add all ingredients except garnish to shaker with plenty of ice, shake until very cold and diluted, 15-20 seconds.

Step 3

  • Strain into chilled cocktail glass, and drape the thyme stem over the edge of glass or drop it in. Sit outside in the chilly autumn air and drink up!
