Peach season is short, but around here, it’s something we wait for all year. Once those ripe South Carolina peaches arrive, it’s cobbler time. This summer peach cobbler is our favorite way to celebrate the season—warm, spiced, and rich with tradition.

I learned an important lesson last year. You see, I had gone my whole life thinking that I liked peaches—those fragrant, juicy stone fruits that are fresh and in season for just a few fleeting weeks midsummer. But, as it turned out, I didn’t even know what real peaches were.

We all need a mother (or mother-in-law) to set us straight once in a while, and thanks to mine (Miss Patsy), my peach-related misconceptions were quickly rectified. I now know that peaches—real peaches—come not from Georgia, and certainly not from California, but from South Carolina.
This is our second year ordering from McLeod Farms, and we have come to look forward to our weekly deliveries with great anticipation. The moment I open each box, the tantalizing aroma of ripe peaches fills the air. I almost feel that I am walking in an idyllic peach orchard, surrounded by lush, heavy fruits and fragrant blossoms.
(In fairness, I have never actually been to a peach orchard. But, thanks to my good friend Anne Shirley, I am able to imagine it.)
What to Do With So Many Peaches? Make Homemade Southern Peach Cobbler
When that first box arrives, we typically gorge ourselves on the fresh fruits and eventually collapse on the couch, languid in our satiety. But by the time that second box comes around, we are all hankering for a warm, homemade southern peach cobbler—the kind that makes the whole kitchen smell like sunshine and spices.

My Favorite Summer Peach Cobbler Recipe
There are several kinds of peach cobblers. Some are topped with a biscuit dough have a thick and fluffy topping; others have a batter poured on top that crisps in the oven. Some are topped with a traditional flaky pie dough; still others, with a crumble topping.
Mine is a cross between a biscuit and a batter. Rich, tangy buttermilk reacts with baking soda to create a topping that is at once light and fluffy like a biscuit, yet sweet and tender like cake. It is the perfect ratio of sweet topping to golden, spiced peaches.
Flavor Boosters for the Best Summer Peach Cobbler
I love the combination of warming cinnamon, earthy nutmeg, sharp ginger, and floral cardamom together with the peaches. A little tapioca starch is my favorite way to create a little viscosity as the peaches bake.
How to Serve Your Homemade Peach Cobbler
This summer peach cobbler is wonderful on its own, served warm, but I like it best with vanilla ice cream or with a lightly-sweetened crème fraîche scented with additional cardamom. (Or, do as my grandfather would have, and drown it in a healthy-sized river of heavy cream.)

Dessert pairings are exciting because they involve exploring sweeter wines. You can talk to someone at your local wine shop to help you identify late-harvest wines, wines made from grapes affected by noble rot (botrytized wines), or even ice wines. Without diving into a detailed oenology lesson, though, I recommend researching each of these wines – they are all fantastic sweet options that would pair beautifully with this homemade peach cobbler. Perhaps more commonly available in your local shops, and also a delightful pairing, would be Moscato d’Asti. Don’t shy away from this Moscato! It’s creamy, fresh, bursting with peach notes, and delicately sweet.

Summer Peach Cobbler
Equipment

Ingredients
For the peach filling:
- 8 large fresh yellow peaches sliced (collectively, about 1500g before removing peels and pits)
- 1/4 cup (60g) sugar
- 1½ tablespoons tapioca starch
- ½ teaspoon cinnamon
- ¼ teaspoon ginger
- ¼ teaspoon cardamom
- ⅛ teaspoon nutmeg
- 1 pinch kosher salt
For the topping:
- ¼ cup (60g) unsalted butter melted, plus extra for greasing the pan
- ¼ cup (60mL) buttermilk (you can also use plain yogurt thinned with milk or even kefir!)
- ¾ cup (150g) sugar
- 1 teaspoon vanilla
- 1 cup (120g) flour
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- 1 pinch Kosher salt
- 2-3 tablespoons brown sugar or turbinado sugar (optional)
Step by Step Instructions
Step 1
- Peel the peaches by carefully lowering them into a pot of boiling water, and allow to cook for 90 seconds.

- Remove and immediately transfer to a large bowl of ice water to shock.

- After about 3 minutes, remove the peaches and peel as you rub gently, the skin will fall right off.

Step 2
- While the peaches are cooling, whisk together the sugar, tapioca flour, spices, and salt in a medium bowl, and set aside.
Step 3
- Next, cut the peeled peaches into medium chunks and transfer to a large bowl. Sprinkle the sugar mixture over the spices, and mix to combine using a silicone spatula. Allow to sit for 20-30 minutes. Proceed to the next steps while the peaches are macerating.

Step 4
- Preheat the oven to 350°F (180°C), and grease the bottom of a large casserole (around 3 quarts) with butter.
Step 5
- Mix the melted butter, buttermilk, sugar, vanilla, flour, baking powder, baking soda, and salt until combined. It will have a texture similar to that of cookie dough.

Step 6
- Pour the peaches into the prepared pan, and spread as evenly as you can with the dough, using a scoop or your fingers.

Step 7
- Bake for 30 minutes. If desired, remove from the oven and sprinkle brown or turbinado sugar evenly over the top. Bake for another 15 minutes, until golden-brown. If desired, you can broil for 2-3 minutes, watching carefully, to obtain a browner, crispier top.

Step 8
- Allow to cool until just warm, and serve with vanilla ice cream, whipped cream, or crème fraîche flavored with your favorite warming spices.
